I’ve spent the last six years helping one of my friends, a local farmer, on her farm. The previous owner planted tons of lavender bushes. Anytime I think of lavender, I think of the bees buzzing around this humongous patch of lavender in the summer!

Over the past few years, I’ve started bringing home fresh lavender to dry and use around my home. It’s a versatile ingredient and can be used for food and body care products.

Lavender-infused honey is a type of regular honey mixed with dried lavender buds that sits to develop flavor over time.

If you’ve never tried it, lavender has a delicious flavor! It’s surprisingly light and fruity.

These two ingredients are really a perfect complement to each other as the honey gives the lavender a lovely sweetness, and the lavender makes the honey less sickly sweet.

Ingredients for Lavender Infused Honey

Dried culinary lavender

Although all varieties of lavender are technically edible, not all are enjoyable.

It’s important to choose a culinary lavender variety. If you’re not sure which type you have, learn more about the different varieties here.

Use dried lavender to avoid adding additional moisture to the honey. Although honey is naturally antibacterial, it’s also an anaerobic environment. Any additional water can ferment. Since dried lavender has no moisture, it’s the perfect ingredient for this easy recipe.

Select an organic lavender to avoid exposure to pesticides.

Raw honey

Look for light-colored, raw wildflower honey.

It’s always best to use local honey when possible. If you cannot find high-quality honey near you, look for organic raw honey in a store near you.

How to Make Lavender Infused Honey

  1. Add 2-3 tablespoons of organic dried lavender in a clear jar.
  2. Cover the dried lavender with the liquid honey.
  3. Allow the mixture to set out of direct sunlight for at least a few days. Be sure to shake, stir, or flip the jar daily to distribute the lavender evenly.
  4. Once the honey tastes like lavender to you, strain out the dried buds and store the honey in an airtight jar.

How to Store Honey Infused With Lavender

Since this recipe includes dried lavender, this mixture will last around a year or longer.

Simply keep it sealed in an airtight glass jar, and always use a clean spoon for scooping.

Should I heat this lavender honey recipe?

Although other recipes out there will say to heat your honey over medium heat, I don’t.

Personally, I try never to heat my honey because I exclusively buy raw honey. Heating honey can destroy some of its nutritional value and beneficial enzymes.

Instead, I play the slow game and let this herbal honey mix at room temperature for as long as it needs. With a bit of patience, you’ll have a lovely product you can use however you’d like!

What’s the difference between lavender honey and lavender-infused honey?

Lavender honey can either be honey made from bees that pollinate lavender flowers or it can be a quick way to refer to honey infused with lavender.

Lavender-infused honey is regular honey, not specifically honey made from the pollination of lavender, that is combined with dried lavender buds for a sweet lavender flavor.

Both are delicious products but made in completely different ways.

Are lavender and honey good together?

Although some folks shy away from eating lavender, it’s actually delicious in culinary preparations! The trick is to balance it with some sweetness and only use a little bit.

I’ve found that lavender adds delicate fruitiness to recipes. Although this lavender-infused honey smells strongly of lavender when you open the jar, it really has a complex, floral flavor that enhances any tea or recipe.

  • 1 small glass jar 8 oz



  • In a clear jar, add 2-3 tablespoons of organic dried lavender.
  • Cover the dried lavender with the liquid honey.
  • Allow the mixture to set out of direct sunlight for at least a few days. Be sure to shake, stir, or flip the jar daily to keep the lavender evenly distributed.
  • Once the mixture is ready, strain out the lavender buds and store the honey in an airtight jar.


Allow the mixture to rest for at least a few days up to two weeks. Once you like the taste, strain out the lavender buds to make the honey easier to consume.
Store the honey out of direct sunlight and turn or shake the jar often.
Feel free to add less lavender or more depending on your taste. I prefer combining just 2 tablespoons and find that the honey smells like lavender after just one day. It takes about a week for the flavor to fully develop.
