What’s in-season?

This season really covers a lot of range. It starts off slow with strawberries and rhubarb usually starting around April/May, but then it picks up steam quickly. 

Before you know it, you’ll see the first of the stonefruits, including apricots and cherries. I’m often able to grow or find raspberries towards the end of Spring, and there are still lots of fresh citrus fruits available.

If you’re open to more tropical flavors, you could also play with pineapple, passion fruit, bananas,

Strawberry Snack Cake with Whipped Cream Frosting

This isn’t one of the light and airy cakes; it’s more like a pound cake – buttery, moist, and rich. The fresh strawberries balance it out, especially the fluffy strawberry whipped cream topping!

Strawberry Rhubarb Scones

Scones are one of the easiest ways to serve up this classic Spring duo, ideal alongside a hot cup of coffee at brunch or a cold homemade lemon in the afternoon.

Strawberry Apple Crisp

Leftover apples and fresh strawberries are the perfect match under a crunchy, buttery oat topping. Heaven with a little ice cream!

My muffin recipe is moist and tender, which really lets the flavor of the fresh strawberries shine. Maybe with a glass of Strawberry Rhubarb Lemonade?

Apple and rhubarb add heartiness and lots of flavor here, and the oat topping gives them a little extra crunch.

Lemon Blondies

Blondies are the perfect vehicle for celebrating tart fruits, like raspberries or lemon, because all the sweetness balances them out. I like to garnish these ones with lemon slices for extra color!

Lemon White Chocolate Scones

These scones are one of my favorite last-minute desserts to make. You don’t need any delicate berries, just fresh lemons, white chocolate, and a few pantry staples.

Cherry Scones

Cherry season usually starts for us in June, which is still technically Spring. The second they start rolling in, I’m buying. 

These cherry scones are easy to make either by hand or with a food processor, and they have lots of fresh cherries to savor in each one.

Cherry Cobbler

There are several different types of cobblers out there, but I prefer to make mine with a fruity, pie filling-like base and a cake-like topping. 

The richness of the cherries and the sweetness of the cobbler topping are a true match made in heaven. Serve with ice cream or whipped cream, and the whole batch will disappear in no time.

Cherry Apple Crisp

Apples almost always show up in my crisp recipes because they 1) stretch more expensive fruit, 2) add great texture, and 3) add pectin, which helps give you a really nice consistency in the fruit layer. 

You can also use frozen cherries, which makes this a great recipe to enjoy even during the off-season!

These are one of my all-time favorite blondie recipes: sweet and chewy with tart raspberries and sweet white chocolate. So good!

The tartness of fresh raspberries is a perfect match for creamy white chocolate.

Tayberries are a special cross between raspberries and blackberries, but you can make them with whichever fresh berries you have on hand.
