Hot honey glazed carrots are the best veggie side yet are super simple to make! Sweet carrots are roasted until tender, then coated with a generous drizzle of hot honey for a little heat to balance the sweetness. Perfect for the holidays or any night of the week!
I know hot honey is old news to most people, but we rarely buy store-bought condiments so it took us years to try this stuff. I get why it is so popular!
Since we already have honey and red pepper flakes on hand, I started making my own homemade spicy honey. It’s perfect for serving over roasted veggies, stirring into vinaigrettes, drizzling over warm biscuits, and so much more.
But, I think it might be perfect on these roasted carrots. It really wakes them up and I love the sweet and spicy combination.

Ingredients
- Fresh carrots – Use whole carrots, peeled and trimmed to remove the tops. I used rainbow carrots and loved the different color variations.
- Olive oil – Or avocado oil.
- Kosher salt
- Homemade hot honey – This recipe is made with honey, red pepper flakes, and apple cider vinegar. Super simple!
- Unsalted butter – Melted to create a simple hot honey butter sauce.
- Fresh herbs – Mince and sprinkle fresh parsley or a little fresh thyme over the carrots for a pop of color.

How to Make Hot Honey Glazed Carrots
- Preheat the oven to 425 F. Line a rimmed baking sheet with parchment paper.
- Arrange the carrots on the sheet pan. Drizzle with olive oil and salt and toss to combine. Make sure each carrot is coated.
- Roast for 20-25 minutes or until the carrots caramelize on the outside and are tender on the inside. Remove from the oven.
- Add butter and hot honey to a small saucepan. Melt over low heat and stir to combine.
- Drizzle the hot honey glaze over the carrots and sprinkle with fresh herbs. Serve and enjoy!
Storing Suggestions
Store any leftover carrots in an airtight container in the fridge for 3-4 days. To reheat, either microwave or spread the carrots on a sheet pan and bake at 375 F until heated through.
Tips & Variations
- Watch the cooking time. Thinner carrots will cook faster than larger carrots. I don’t worry about it too much, but you can always remove the skinnier roasted carrots first and let the thicker ones keep roasting.
- Increase the spice levels. For really spicy carrots, add 1/4 tsp cayenne pepper or sprinkle red chili flakes over the carrots before roasting. You can also add a teaspoon hot sauce to the hot honey glaze.
- Garnish with lemon juice. A little acid can brighten up the whole dish. Squeeze with a little lemon juice just before serving.
- Add cheese. I love sprinkling these carrots with a little feta cheese or goat cheese too. The salty, creamy flavor is great with the sweet carrots!
- Use sliced carrots. Instead of whole carrots, slice them into 1/2 inch thick carrot rounds. They’ll roast much faster, so check around 15 minutes.
How to Serve
We enjoy serving these carrots with any sort of roasted meat, like roasted chicken, baked chicken thighs, and more. They look (and taste) fancy enough to serve at the holidays, but are really easy enough to make any night of the week!

Yes, if you’d like. You’ll want to reduce the roasting time as they are thinner than whole carrots and will roast faster.
I do recommend it. The peels have a slightly bitter taste. You’ll get the best flavor without them.
Yes, you can definitely prepare the carrots in the air fryer, if you prefer. They’ll generally cook a little faster like that, so check on them after 15 minutes and shake the air fryer basket once or twice.
