Ingredients
2lbswhole carrotspeeled and tops removed
1tbspolive oilor avocado oil
1tspkosher saltif using table salt, reduce to 1/2 tsp
1tbspunsalted butter
2tbsphot honey
1tspfresh parsleyminced
Instructions
Preheat the oven to 425 F. Line a rimmed baking sheet with parchment paper.
Arrange the carrots on the sheet pan. Drizzle with olive oil and salt and toss to combine. Make sure each carrot is coated.
Roast for 20-25 minutes or until the carrots caramelize on the outside and are tender on the inside. Remove from the oven.
Add butter and hot honey to a small saucepan. Melt over low heat and stir to combine.
Drizzle the hot honey glaze over the carrots and sprinkle with fresh herbs. Serve and enjoy!
Notes
Store any leftover carrots in an airtight container in the fridge for 3-4 days. To reheat, either microwave or spread the carrots on a sheet pan and bake at 375 F until heated through.
