This homemade brownie mix is just as convenient as boxed mixes, but totally from scratch and absolutely delicious. The brownies are super thick and moist with tons of chocolate flavor. Keep them on hand for easy baking or share a jar as a homemade gift!

Boxed brownie mix is so cheap and easy that you may even wonder if it’s worth it to make your own.

And my answer? Yes, absolutely yes.

Homemade is always best, even if it is imperfect or a little messy.

But for many of my friends and family, baking from scratch feels intimidating. They worry about messing things up and wasting ingredients (which is just part of learning), but they still want to be able to offer their families a batch of homemade brownies or fresh-from-the-oven cookies.

This is where homemade baking mixes really come in handy.

They get the benefit and convenience of a premade mix without having quite so many steps to follow.

They don’t need to worry about if they have enough cocoa powder or baking powder in the pantry; they can just start preheating the oven and get baking!

Plus, this recipe is just great. The brownies are THICK and moist with lots of chocolate flavor from the cocoa powder and the chocolate chips. Simple, classic, timeless deliciousness, but all prepped for you. Win-win!

Ingredients

Unlike my chocolate chip cookie mix that needs to be layered in a particular order, this one can just be layered however you like. I usually like to alternate the brownie and white ingredients for a little color contrast, but that’s up to you.

  • White sugar
  • Cocoa powder
  • All purpose flour
  • Baking powder
  • Kosher salt
  • Chocolate chips

To bake, you’ll need oil or melted butter, eggs, vanilla extract, and water. The printable tags have all of this information, which makes them ideal for gifting.

Homemade Brownie Mix in a Jar

My favorite thing about this recipe is absolutely the brownies. I tested the recipe multiple times until I got brownies that hit all my specs: thick, moist, and genuinely full of chocolate flavor.

I wanted brownies that would stay soft for days and not dry out, but without being cakey.

In my tests, I found that adding water really gave the brownies so much more flavor. I think the water hydrates the cocoa powder, allowing it to release the fullness of its flavor.

Vegetable oil also helps keep brownies really soft, but the flavor of vegetable oil isn’t quite as nice as melted butter IMHO.

Tips & Variations

  • Adjust the mix-ins. Technically, the chocolate chips are optional. I like the extra texture and chocolate flavor, but you could skip them or replace them with chopped nuts, dark chocolate chunks, M&Ms, and more.
  • Use parchment paper. Whenever I bake brownies or blondies, I always use a dark metal pan and I prep it with parchment paper. The metal conducts heat really evenly, and the parchment paper makes it easy to lift the entire batch of brownies out of the pan quickly.

Equipment

Ingredients

For the brownie mix jars

  • 1 1/4 cup sugar
  • 2/3 cup cocoa powder
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1 tsp kosher salt, or ½ tsp table salt
  • 1/2 cup chocolate chips

To bake the brownies

  • 1 quart jar brownie mix
  • 1/2 cup melted butter, or oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup water, or cold coffee

Instructions

Make the brownie mix

  • In a quart mason jar fitted with a canning funnel, add the dry ingredients in any order (I usually alternate white and brown ingredients for color contrast). Seal and attach a printable tag to have the rest of the instructions handy.
1 1/4 cup sugar, 2/3 cup cocoa powder, 1 cup flour, 1/2 tsp baking powder, 1 tsp kosher salt, 1/2 cup chocolate chips

Bake the brownies

  • Preheat oven to 325F. Either oil a square 9×9 metal baking pan or line with parchment paper. Set aside.
  • In a medium mixing bowl, combine the jar of brownie mix with wet ingredients. Stir just until combined.
1 quart jar brownie mix, 1/2 cup melted butter, 2 eggs, 2 tsp vanilla extract, 1/2 cup water
  • Transfer the batter into the pan and spread evenly. Bake for 35-45 minutes or until a toothpick comes out just barely clean.
  • Cool in the pan before slicing and serving.

Notes

These brownies are THICK, which is how I like them. Be sure to bake until a toothpick comes out just barely clean and let them cool at room temperature to set up.
For the best results, use the dry mixes within 3-6 months.
