Homemade pumpkin pie spice makes the store-bought stuff taste like dust! With the right ingredients and a couple key tips, your pumpkin bread and muffins will taste better than ever.

There are LOTS of pumpkin pie spice recipes out there. Why on earth is this one any different?
Well, they all pretty much follow the same general proportions, although some people scale up or down.
In general, you want mostly cinnamon with a fair amount of ginger and nutmeg followed up with cloves and allspice to round it out.
It’s instantly warming and perfectly balanced, ideal for making the best pumpkin oatmeal, coffee syrups, sourdough pumpkin muffins, and more.

Pro Tips for Making the Best Pumpkin Spice Blend
Although the process to make pumpkin pie spice is super easy and the ingredients are probably in your spice cupboard already, there are a couple of things I implore you to keep in mind.

Tip #1: Toast your cinnamon
This is a trick I learned from Bake it with Mel and I thought it was nonsense until I tried it.
Toasting the cinnamon really brings out its flavor.
I like to spread mine on a piece of parchment paper and toast it in the oven at 300F for about 5-10 minutes.
It will start to darken a little and become extra fragrant.
Remove from the oven, let it cool, then store it in a little jar to have ready for any recipe.
Tip #2: Use good-quality spices
For the very best flavor, you really want fresh, aromatic spices.
Burlap and Barrel is my go-to and the flavors and freshness are out of this world.
At the very least, try to use good quality cinnamon.
I bought a pound of organic Ceylon cinnamon last year that works well, but I find that Vietnamese or Saigon cinnamon is even better.

Storing Suggestions
Since all of the spices are dry, they can be stored in a small jar in a cool, dry place (like your spice cupboard or pantry) indefinitely.
For the best flavor, use within 6 months to a year.

Tips & Variations
- Make it hot. Increase the ginger to 3 teaspoons and add 1/2 tsp of freshly ground black pepper.
- Add some chai spice. Cardamom is a perfect match for pumpkin pie spice. Add about 1 1/2 tsp of ground cardamom for an aromatic experience.



How to Use Pumpkin Pie Spice

- Toast your cinnamon. Heat it in a 300F oven in a baking dish lined with parchment for 5-10 minutes. It will darken and start to smell really fragrant and wonderful. Cool and store in a jar.
- Use fresh, high-quality spices. I swear by Burlap and Barrel. The flavor difference is night and day!
