This easy lemon simple syrup uses fresh lemon juice and zest for maximum lemon flavor. Ideal for infusing that bright, sweet lemony goodness in your bakes, cocktails, granola, and more!

Ingredients

  • Water
  • Sugar
  • Fresh lemons (juiced and zested)

How to Make lemon syrup

  1. Squeeze the lemons and measure out the juice. We’re trying to get to 1 cup of liquid in total, so you’ll want to top the juice off with water to reach 1 cup.
  2. Add the lemon juice and water mixture to a medium saucepan with the sugar and lemon zest. Heat over medium low heat, stirring occasionally. Remove from the heat once the sugar crystals dissolve.
  3. Allow the mixture to cool to room temperature and to let the zest infuse all that flavor.
  4. Then, strain out the zest with a fine mesh strainer and transfer to a jar or bottle to store in the fridge.

Storing Suggestions

You’ll want to store this syrup in the fridge for up to about a week.

Tips & Variations

  • Try this with different types of citrus! It works well with oranges, limes, and more.

How to Serve

I first started making this syrup to add bold lemon flavor to baked goods. Sometimes all the zest in the world or lemon extract just don’t cut it! But this syrup can layer in more of that citrus flavor very easily.

I use it as the sweetener in my Lemon Poppyseed Granola, which is irresistible.

Brush it over cakes or cupcakes to lock in moisture, swirl it into cocktails for a hint of sweetness, and more!
