How to Make Dark Chocolate Covered Hazelnuts

Nutty hazelnuts and dark chocolate are the perfect combination, and these chocolate covered hazelnuts may be the best way to enjoy this classic flavor combination. You only need about 4 ingredients and the crunchy, nutty, chocolaty bite is absolutely delicious. Perfect for the holidays or any time you need to satisfy your sweet tooth!

Living in the Pacific Northwest, I have a special love for Oregon hazelnuts and try to keep some in my pantry at all times for delicious salads, banana bread, simple syrup, and more.

Although hazelnuts can easily be served sweet or savory, I think they’re best with chocolate. These chocolate coated hazelnut clusters have just enough sweetness from the chocolate, which brings out the rich nuttiness of the freshly roasted hazelnuts.

They’re so easy to snack on and are lovely to keep in the fridge anytime you need a sweet treat!

Ingredients

  • Whole hazelnuts  I like to start with whole hazelnuts, then toast them to bring out their flavor. Let them cool, then get dipping. Very simple!
  • Dark chocolate chips – You can really use any type of chocolate, but I’m partial to the darkness of semi-sweet or bittersweet chocolate. Hazelnuts pair well with white chocolate and milk chocolate, though, so choose whichever one you prefer.
  • Coconut oil – To help the chocolate set firm. 
  • Sea salt (optional) – For a little contrast in flavor.

To make chocolate covered hazelnuts, you’ll need:

How to Make Chocolate Covered Hazelnut Clusters

  1. Preheat the oven to 300F.
  2. Line a baking pan with parchment paper. Spray hazelnuts in an even layer. Roast for 5-7 minutes.
  3. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30 second increments, stirring after each one. Stop when the chocolate is fully melted.
  4. Add all of the toasted hazelnuts to the bowl and stir well to combine. 
  5. Place spoonfuls of the chocolate hazelnut mixture on the sheet pan. (In these photos, I made large clusters and got about 15. If you make them smaller, you can get closer to 24.)
  6. Sprinkle with sea salt, if you’d like. 
  7. Place the sheet pan in the fridge and allow it to set until hard (ideally 30 minutes or longer).
  8. Serve and enjoy!

Storing Suggestions

The chocolate will stay firm when the hazelnut clusters are cold. I like to keep them in the fridge and eat them while cold. You can also freeze them for several months!

Tips & Variations

  • Add mix-ins. Stir about 1/4 cup of chopped candied ginger, cranberries, or another fruit into the chocolate with the hazelnuts. 
  • Dip individual hazelnuts. For a bite-sized treat, dip each individual hazelnut and let it set. The clusters are a little less effort, but you get a larger serving.

How to Serve

These hazelnuts covered in chocolate are intended as a sweet treat or dessert.

They’re great with a cup of hot cocoa or as a nibble at any holiday gathering. We also like to keep them on hand during the summer months for a refreshingly cold snack!

  • 1/2 tsp kosher salt, or flaky sea salt, optional
