Why you’ll love pink chocolate covered strawberries
These strawberries are coated in a sweet white chocolate shell that breaks as soon as you bite it. Even though the white chocolate is pretty sweet, strawberries have just enough acidity to cut through the sweetness. They taste amazing and you can customize them however you’d like with your favorite sprinkles or food coloring!
Equipment
I recommend setting up a baking tray with a silicone liner or parchment paper to make it easy to remove these pink chocolate strawberries from the pan. You’ll also need a bowl and a spoon for covering the berries with the chocolate. Otherwise, this is a pretty simple project!
Ingredients
Fresh strawberries – Get the biggest, firmest strawberries you can find. Take the time to wash and dry them completely before dipping.
White chocolate chips – Use a bar of white chocolate or white chocolate chips. You’ll need about 12 oz of chocolate.
Coconut oil – This is optional, but coconut oil helps make sure the white chocolate dries hard for a good crunch.
Food coloring – Play around with fruit powders like raspberry or strawberry to color your chocolate naturally. Or, go classic with a little food coloring. I prefer gel colors for bolder colors.
Natural Dye Ideas for Chocolate Strawberries
I played with a couple of different dye options because I wanted to see if I could make cute pink chocolate without adding a liquid that might cause the chocolate to seize up.
- Crushed freeze-dried raspberries
- Powdered strawberry
Crush your pieces really finely to make them into a smooth powder. You won’t get the same even coverage as you get with food dye, but it’s all natural!
How to Make Pink Chocolate Covered Strawberries
- Wash and dry your fresh strawberries. Any moisture will cause the chocolate to seize up, so take your time letting them air dry.
- Set up a baking sheet with parchment paper or a silicone baking mat.
- Add half a bag of white chocolate chips to a small microwave-safe bowl. Microwave for 30-second intervals, stirring after each time. The chocolate should melt after 3 cycles (1.5 minutes).
- Add a teaspoon of coconut oil and 3-5 drops of pink or red food coloring. Stir until fully combined. Add more dye until you get the pink color you prefer.
- Pick up a strawberry by its leaves and use a spoon to pour chocolate over each side. Let the excess chocolate drip off and gently shake the strawberries to get a thin coating of chocolate.
- Set the strawberry on the parchment paper and repeat the process with your remaining strawberries.
- If the chocolate starts to thicken, add more chocolate chips and microwave again using the 30 second increments from before.
- When all of the berries have been dipped, drizzle the leftover chocolate over the berries however you’d like. Sprinkle with your favorite sprinkles or leave as they are. Leave the strawberries at room temperature until the chocolate coating hardens.
- Allow the chocolate shell to harden then enjoy!
Storing Suggestions
These dipped strawberries will last for approximately 5 days in an airtight container. For best results, store them in the refrigerator to keep the berries fresh and the chocolate firm. Place them in a single layer in your container.
Tips & Variations
- Feel free to use white melting chocolate blocks or candy melts.
- Top with your favorite gold or pink sprinkles to color-coordinate your pink strawberries with the colors of your event.
- You can also melt the white chocolate in a double boiler. Set up a sauce pan with a couple of inches of water and add a stainless steel mixing bowl over the pan. Put the pan over medium-low heat and add the chocolate chips. They will melt slowly.
- Use this method to make any color of chocolate. You can make blue chocolate strawberries, purple berries, yellow berries, etc. Just dye your white chocolate or candy wafers in your favorite color.
