Wash and dry your fresh strawberries. Any moisture will cause the chocolate to seize up, so take your time letting them air dry.
1 lb strawberries
Set up a baking sheet with parchment paper or a silicone baking mat.
Add half a bag of white chocolate chips to a small microwave-safe bowl. Microwave for 30-second intervals, stirring after each time. The chocolate should melt after 3 cycles (1.5 minutes).
12 oz white chocolate chips
Add a teaspoon of coconut oil and 3-5 drops of pink or red food coloring. Stir until fully combined. Add more dye until you get the pink color you prefer.
2 tsp coconut oil, 4-5 drops gel food coloring
Pick up a strawberry by its leaves and use a spoon to pour chocolate over each side. Let the excess chocolate drip off and gently shake the strawberries to get a thin coating of chocolate.
Set the strawberry on the parchment paper and repeat the process with your remaining strawberries.
If the chocolate starts to thicken, add more chocolate chips and microwave again using the 30 second increments from before.
When all of the berries have been dipped, drizzle the leftover chocolate over the berries however you'd like. Sprinkle with your favorite sprinkles or leave as they are. Leae the strawberries at room temperature until the chocolate coating hardens.
Allow the chocolate shell to harden then enjoy!
Notes
The nutritional facts assume there are approximately 12 strawberries per pound. The actual number may vary.These dipped strawberries will last for approximately 5 days in an airtight container. For best results, store them in the refrigerator to keep the berries fresh and the chocolate firm. Place them in a single layer in your container.
Feel free to use white melting chocolate blocks or candy melts.
Top with your favorite gold or pink sprinkles to color-coordinate your pink strawberries with the colors of your event.
You can also melt the white chocolate in a double boiler. Set up a sauce pan with a couple of inches of water and add a stainless steel mixing bowl over the pan. Put the pan over medium-low heat and add the chocolate chips. They will melt slowly.
Use this method to make any color of chocolate. You can make blue chocolate strawberries, purple berries, yellow berries, etc. Just dye your white chocolate or candy wafers in your favorite color.
