Easy Cardamom Infused Sugar Recipe

This cardamom sugar recipe is a very easy, mostly passive way to infuse cardamom’s aromatic sweet-and-spicy notes into an ordinary jar of sugar. Use it to add a touch of cardamom and sweetness to black tea, coffee, cookies, cardamom scones, muffins, and more!

What is cardamom sugar?
Cardamom sugar is an infused sugar, which means the flavor oils from the cardamom seeds infuse into the sugar. This to impart cardamom’s unique flavor in any recipe. It’s the same process you use to make vanilla sugar, lavender sugar, etc.
These flavored sugars can then be used instead of white sugar in your favorite cookie recipe, sweeten tea or coffee, make simple syrups, and much more!
Equipment
- Mason jar
- Fine mesh strainer
- Canning funnel (optional)
- Airtight container or mason jar for storage
Ingredients
- Pure cane sugar – You want a neutral sugar without additional flavor to affect the final product. I like to use cane sugar, but you can use any type of white sugar.
- Cardamom seeds – You’ll need to remove these from the cardamom pods or purchase ground cardamom seeds. I opened them with my fingers, but you can crush them open with the side of a sharp knife, a rolling pin, or a mortar and pestle. I like to use the Cloud Forest Cardamom from Burlap and Barrel, which has an incredible flavor!

How to Make Cardamom Sugar
- Remove the seeds from the cardamom pods and grind into a powder (or use powdered cardamom pods). Add to your mason jar.
- Cover with sugar and shake.
- Store in a cool, dry place for 2-4 weeks or until the sugar takes on the scent and flavor of cardamom.
- When the scent is strong enough, use to sweeten teas, roll cookies, and more!
Storing Suggestions
Once strained, the sugar mixture can be stored for months, if not years. Just keep the container sealed and shake occasionally to break apart any clumps.
Tips & Variations
- Don’t toss the husks! Those can be steeped with water and sugar to make my cardamom simple syrup. You can also add them to the sugar mixture and just strain them out at the end.
- Instead of adding the cardamom seeds whole, feel free to blend them into a powder or add ground cardamom (approximately 1 tsp).
- Be patient. The longer the mixture sits, the stronger the flavor.

- Roll balls of sugar cookie dough
- Sweeten a cup of tea or your morning coffee

- 1 tsp ground cardamom seeds, if using whole cardamoms, approximately 20-25 pods with husks removed
