Tender and chewy with herbal notes of cardamom in every bite, these super simple cardamom blondies are the perfect last-minute dessert or brunch item. You wouldn’t believe how simple they are to make, but their chewy bite and sweet, aromatic flavor makes them one of a kind. Simple perfection.

Cardamom is one of my all-time favorite flavors. It smells medicinal at first, but it adds this whimsical freshness that I find myself craving often.
I especially enjoy baking with cardamom, pairing it with fresh fruits or nuts.
This flavor is strong enough to stand on its own, though, and these blondies are proof of that. They do use two of my homemade infusions (cardamom extract and cardamom sugar), which you’ll find infinite other uses for, too.

Ingredients
- White sugar – Use regular white sugar, not brown sugar, to let the cardamom flavor stand out the best.
- Melted butter – Unsalted butter is best here.
- Egg
- Cardamom extract – Don’t waste your money splurging on this ingredient somewhere else. Make my cardamom extract recipe, and you’ll have a delicious extract ready in just 3 days! It’s the fastest extract of all time and so versatile.
- Baking powder – For a little bit of leavening to help the blondies puff up.
- Kosher salt – To balance the sweetness.
- White flour – Regular white flour works great here.
- Cardamom sugar (optional) – To sprinkle over top of the bars before baking. If you don’t have any, make your own cardamom sugar in just a few seconds. Mix one tsp of freshly ground cardamom seeds with 1 cup of sugar and shake well.
How to Make Cardamom Blondies
- Preheat oven to 350 F. Line a square baking pan with parchment paper.
- In a large bowl, combine butter and sugar. Whisk well to incorporate. Add the egg and cardamom extract and whisk well.
- Add the dry ingredients (baking powder, salt, and flour), and whisk well.
- Spread the batter into the prepared baking pan, filling the corners to get an even layer.
- Bake for 35-40 minutes or until a toothpick comes out clean from the center.
- Let the blondies cool for about 10-20 minutes in the pan, then lift the sides of the parchment paper. Slice and serve.

Storing Suggestions
Once the bars are cool, store in an airtight container at room temperature for 2-3 days.
Tips & Variations
- Add white chocolate chips. I often like to add white chocolate to blondies, but honestly, these bars don’t need it.
- Add fruit or nuts. The cardamom flavor would be incredible with some chopped pistachios or almonds. You can also add strawberries, blackberries, apricot, and more. A little lemon zest would be lovely as well.
- Double the batch. This recipe can easily be doubled and baked in a standard 9×13 baking pan. You may need to add up to 10 more minutes of baking time, but that’s it.

How to Serve
The cardamom flavor is a lovely match for black coffee or a hot cup of chai tea. I usually like to eat them with fresh berries and a hot cup of coffee for a nice afternoon treat.
FAQs
Personally, I prefer it. The cardamom flavor is just lovely and the extract adds the right amount. If you don’t have cardamom extract, use regular vanilla extract and add up to 1 tsp of ground cardamom to the bars. Use regular white sugar to sprinkle on top (recommended for a crispy crunch).

Cardamom Blondies
Ingredients
- 1 cup white sugar

- 1 tsp kosher salt
- 1/2 tsp baking powder
- 1 cup flour
- 2 tsp cardamom sugar, or regular sugar

These look really good, despite my vow to only eat chocolate when eating desserts!
I bought the cardamom extract from your blog about making it, as I didn’t want to wait to make things with it. I am STILL going to make it, though. The picture you have actually made me want to make and eat these even though they aren’t chocolate.
I’m diabetic on keto, so will need to change the sugar and the flour, but that should be ok. I’ll try to come back with the results.
I actually have a “dirty dandy blend” coffee sub that has cardamom in it…
