Infused with brown sugar, cinnamon, and chunks of fresh apples, these soft Cinnamon Apple Blondies taste like fall in bar form. My favorite part? They require ordinary pantry staples and are ready in no time, yet the flavor tastes gourmet. No need for a glaze or anything else!

I know they look humble, but these little apple blondies are so much better than you’d expect. They’ve got a winning roster of ingredients, like brown sugar, melted butter, and cinnamon, but it’s the apple that really sings.
As the apple sits in the sugar and cinnamon, it releases its juices, which then infuse into the bars. This also makes them soft and moist, but with chewy edges.
I’ve baked a lot of fall dessert recipes for the blog and you would be surprised to know that these quick apple bars are on my list of the forever favorites.
That is not an exaggeration; I would gladly eat these every single day!

Ingredients
- Unsalted butter – Melted butter is best in blondies since it adds a nice, chewy texture.
- Light brown sugar – I use all brown sugar in this recipe to get more of that cozy fall flavor.
- Cinnamon extract – This is an easy way to add extra cinnamon flavor, but you can also use vanilla extract in a pinch.
- Egg
- Salt
- Baking powder
- All purpose flour – Be sure to scoop and level the flour into the measuring cup to avoid adding too much flour.
- Cinnamon
- Tart apple – For the best contrast with the sweet brown sugar, I recommend using a tart or sweet-tart variety, like Honeycrisp, Granny Smith, or Cosmic Crisp.

How to Make Apple Cinnamon Blondies
- Preheat the oven to 350F. Line a square metal pan with parchment paper.
- Mince the apple and add it to a small bowl with cinnamon and brown sugar. Stir and let it rest while preparing the remaining blondie batter.
- Add the brown sugar and cinnamon to a bowl, and top with melted butter. Stir to combine. Then add the egg, salt, and extract. Once combined, fold in the dry ingredients (flour and baking powder).
- Fold in the chopped apples and any residual cinnamon sugar mixture.
- Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean from the middle and the edges are golden brown.
- Remove from the oven and let the bars cool for at least 10 minutes before removing from the pan.
Note: For the neatest cuts, refrigerate the blondies completely then use a long, sharp knife.

Storing Suggestions
Allow the bars to cool to room temperature then store in an airtight container in the fridge for 3-4 days. Since they contain fresh baked apple, they should not be stored at room temperature.

Tips & Variations
- Play with add-ins. For a little extra texture, fold in chopped walnuts or pecans or cinnamon chips.
- Glaze it up. Drizzle with the apple glaze from my Apple Crumble Scones for an even brighter flavor.
- Brown the butter. Nutty brown butter adds extra depth of flavor that tastes these chewy apple blondies over the top.
How to Serve Apple Blondies
Since these bars have quite a bit of butter and sugar, we usually serve them as a dessert or a special treat for brunches or holidays.
They’d be great for a Thanksgiving dessert table or as a cozy fall bake to celebrate the season!

Brown Sugar Cinnamon Apple Blondies
Ingredients
For the Apples
- 1 medium apple, peeled and minced into fine cubes; approx 1 cup
- 1/8 tsp cinnamon
- 1 tbs brown sugar
For the Blondie Dough
- 4 oz unsalted butter, one stick, melted
- 1 cup light brown sugar
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp kosher salt, use half as much if using fine or table salt
- 1 tsp cinnamon extract, or vanilla extract
- 1 cup flour
- 1/2 tsp baking powder
Instructions
- Preheat the oven to 350F. Line a square metal pan with parchment paper or butter it for easy serving.
- Mince the apple and add it to a small bowl with 1/8 tsp cinnamon and 1 tbsp of the brown sugar. Stir and let it rest while preparing the remaining blondie batter.1 medium apple, 1/8 tsp cinnamon, 1 tbs brown sugar
- Melt the butter and add it to a medium-sized bowl.4 oz unsalted butter
- Stir in the sugar, cinnamon, extract, and egg. Whisk until fully incorporated.1 cup light brown sugar, 1 egg, 1 tsp cinnamon extract, 1 tsp cinnamon
- Add the dry ingredients (salt, baking powder, and flour) and stir to incorporate but without overmixing.1/2 tsp kosher salt, 1/2 tsp baking powder, 1 cup flour
- Fold in the diced apples and any residual cinnamon sugar mixture.
- Pour into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean and the edges are golden brown.
- Remove from the oven and let the bars cool for about 10 minutes. Remove from the pan and let the blondies cool to room temperature on a wire rack. Cut into slices and serve!
