Ingredients
For the Apples
1medium applepeeled and minced into fine cubes; approx 1 cup
Preheat the oven to 350F. Line a square metal pan with parchment paper or butter it for easy serving.
Mince the apple and add it to a small bowl with 1/8 tsp cinnamon and 1 tbsp of the brown sugar. Stir and let it rest while preparing the remaining blondie batter.

Melt the butter and add it to a medium-sized bowl.
4 oz unsalted butter
Stir in the sugar, cinnamon, extract, and egg. Whisk until fully incorporated.

Add the dry ingredients (salt, baking powder, and flour) and stir to incorporate but without overmixing.
Fold in the diced apples and any residual cinnamon sugar mixture.

Remove from the oven and let the bars cool for about 10 minutes. Remove from the pan and let the blondies cool to room temperature on a wire rack. Cut into slices and serve!
