Add the sugar, water, and chopped strawberries to a medium saucepan.
Heat over medium heat and stir occasionally until the sugar dissolves. Bring the mixture to a gentle simmer for about 5 minutes, then remove from heat.
Add the vanilla extract, if using. Let the syrup cool to room temperature on the stove. This infusion time really helps the flavor develop.
Pour the strawberry mixture through a fine mesh strainer to remove the cooked strawberries. Be careful not to press down! The berries will break apart and cause a cloudy syrup.
