With a buttery oatmeal streusel topping and perfectly ripe strawberries and apples, this strawberry apple crisp is the perfect summer dessert! It just needs a scoop of vanilla ice cream to take it to the next level!
In a 9 x 13 baking dish, add your diced apples, strawberries, sugar, flour, and salt. Stir to combine.
2 cups strawberries, 4-5 apples, 1/4 cup sugar, 1/4 cup flour, 1 pinch kosher salt
In a mixing bowl, add the crumble topping ingredients except for the butter. Cut the butter into small pieces using a knife. Add the cold butter pieces to the mixture and cut them in using a fork or pastry blender.
1 1/2 cup oats, 1/2 cup flour, 1 cup brown sugar, 1/4 cup white sugar, 2 sticks butter, 1 pinch salt, 1/4 tsp cinnamon, 1 tsp vanilla extract
Sprinkle the crisp topping evenly over the pan.
Place the strawberry apple crisp in the oven and bake for 45-50 minutes or until the crumble is golden and you can see the liquid from the fruit bubbling in the corners.
Allow the crisp to cool for 20-30 minutes, then serve with whipped cream or ice cream.
Notes
Feel free to use your favorite type of apple. I prefer crisp apples, but they can be tart or sweet.
You can easily use whole wheat flour in the crisp topping for this strawberry dessert.
For the oats, you can use rolled oats or quick oats. They both work great!
For a hit of warm spices, add a teaspoon of cinnamon and/or ginger to the crisp topping.
Strawberry Apple Crumble Topping
If you prefer an apple strawberry crumble, you'll need to make a slightly different topping.
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup partially melted butter
1 tsp vanilla extract
1/4 tsp kosher salt
Mix the crumble topping ingredients together in a medium bowl, then pour them over the fruit filling. Bake like normal and enjoy!
