These spiced sugar cubes are incredibly easy to make, require very few ingredients, and taste just like your favorite holiday cookies! Perfect for tucking into gift baskets as a homemade holiday gift.

1 silicone mold ; depending on the size of the mold and how many cubes you want, you may need more than one
Combine sugars, extract, and cinnamon in a medium bowl. Stir to combine.
1/2 cup brown sugar, 1/2 cup white sugar, 2 tsp vanilla extract, 1/2 - 1 tbsp cinnamon
Add the sugar mixture to your mold. Press down with your spoon or hands to compress the sugar in the mold.
Use a butter knife or bench scraper to flatten the back of the mold to make sure the sugar cubes have clean edges after you remove them from the mold.
To dry the cubes, you can either put the mold in a dehydrator at 135F for 1-2 hours. If using the oven, set the heat to 170F and crack the door open several inches. Dry for about 1 hour in the oven.
Once the cubes are fully dry and hardened, remove them from the molds.
Store in an airtight container (like a glass mason jar) and add to coffee or tea to add a little sweetness and flavor!

Quantity of CinnamonMy husband and I taste-tested different quantities of cinnamon. 1 Tablespoon per batch - great for people who don't love their coffee super sweet and will use just a couple of cubes at a time.1/2 Tablespoon - better for people who add a lot of sugar; otherwise, it can be too much cinnamon flavorBatch SizesFor one batch, I can fill almost one whole blue tray (the little cube shapes). For the larger ornament shapes, one batch was enough for just more than 2 molds.You can easily double or even triple the batch size as long as you have enough molds!Note: The more ornate the mold, the more they may break in storage.Although the ornament shape is cute, the little hook portion almost always broke off either coming out of the mold or in storage.
