Simply put, banana bread baked oatmeal is an adaptation of our basic baked oatmeal recipe that also includes mashed bananas, melted butter, and chopped nuts.

Instead of cooking down oatmeal on the stove each morning for breakfast, you can make one big batch of this baked oatmeal on the weekend and enjoy it for breakfast each day!

Life is too busy and complicated to make breakfast from scratch every day! Part of our meal planning routine is to batch cook items like breakfast and lunch on the weekend. Then, during the week, we simply heat up our pre-portioned meal and enjoy!

Baked oatmeal is perfect because it’s infinitely adaptable, totally gluten free, and comes together quickly in one pot. You can even let it sit overnight or make it right away. It’s so flexible (and delicious)!

Ripe bananas (mashed in your baking dish)
Melted butter

Banana Bread Baked Oatmeal Substitutions

This oatmeal banana bake recipe is incredibly versatile. You can make it without bananas (although then it’s not banana bread…), use your favorite sugar or sweetener (reduce the quantity if you’re using a concentrated sweetener like stevia), swap out or replace the nuts with whatever you have on hand, use vegan or non-dairy milk instead, etc.

You really just need the oats, some sort of liquid, a little fat or oil, salt, and the leavening agent. The rest can be adapted as desired. The final result will be different and for ideal results, follow the steps accordingly.

How to Make Banana Bread Baked Oatmeal

Ingredients
2-3 ripe bananas (mashed in your baking dish)
1/4 c melted butter
1/4 c brown sugar or maple syrup
1/2 c chopped walnuts or pecans
2 c milk (non-dairy options like almond milk work, too!)
3 c old fashioned or rolled oats
1/2 tbsp baking powder
2 eggs
1/2 tsp salt
1/2 tbsp cinnamon
1 tsp vanilla (make your own!)

One 9 x 13 tray (typically 6-8 servings)

Baked Banana Bread Oatmeal Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grab a 9 x 13 baking dish.
  3. Mash your bananas directly into your baking dish. Add all of the other ingredients except for the oats. Stir everything together to make sure it is well-incorporated.
  4. Add your oats to the wet mixture. Stir.
  5. Bake for 30 minutes and serve!

How should I serve this banana baked oatmeal recipe?

Personally, I like to have yogurt with my oatmeal. Is that weird? We started culturing our own milk kefir because it’s easier to make than yogurt. We like to pour some of that on top for a creamy dose of probiotics.

Should I grease the pan for baked oatmeal?

You definitely can and that will help make it easier to serve your baked oatmeal. However, we typically do not as the oatmeal tends to come out of the baking dish pretty easily. We just soak the pan when we’re done, scrub it out, and it’s ready for the next recipe!

I don’t have bananas. Can I make this anyway?

Yep, go ahead and make it anyway! It won’t be banana bread baked oatmeal, but it will still be great.

Can I use maple syrup instead?

The sweetener is totally flexible in our baked banana oatmeal. If you would rather use maple syrup powder, monk fruit brown sugar, etc, all of those are fine. You can even make it without any sugar if you’re trying to cut back on your sweeteners. In this situation, it won’t be very sweet, but there will be a mild sweetness from the bananas.

Can I use non-dairy or vegan milk?

Yep! This recipe is so flexible. You can also make it with water, but it won’t be as creamy. Try almond milk or coconut milk!

Do I have to use eggs?

Not really. They help bind everything together and add a little protein, but you can make it without. It just won’t rise as well and will likely be denser. Consider adding an additional 1/2 tsp baking powder if you do this.

Can I use a different type of nut?

Go for it! We used pecans in this banana bread oatmeal bake because that’s what we had on hand, but walnuts would be great, too. Have a nut allergy? Skip ’em! No harm done.

Can I add chocolate chips?

Chocolate chips would be so good in these baked oats with banana. Add about 1/2 cup.

Can I prepare this baked oatmeal the night before?

This banana bread baked oatmeal recipe is great prepped the night before! Simply combine everything following the instructions above, but allow it to sit in the fridge overnight. You may need to stir the butter back in to make sure it doesn’t solidify in one place.

  • If you gently press the middle of the oatmeal, it should have a slight bounce
